Mexican Spaghetti Squash


This doesn't LOOK that good but it is!


Mexican Spaghetti Sauce


I took a spaghetti squash and cut it lengthwise in half.  Spooned out seeds.-- I rub inside with olive oil. 

Preheated oven to 375. 

Turn them flat side down and roast in oven for about 45 min on a baking sheet.

Use fork to scrape out the. "Spaghetti"

I cooked ground beef.  
Added salsa, 
black beans, 
corn, and 
chopped bell pepper..

Once it was all mixed together and put a little shredded cheese on top!

You know how picky I am...haha Does it taste like squash?
